Through precise plot management, each variety is perfectly matched to its terroir, ensuring exceptional results. Harvested at peak ripeness, the canes are immediately transported to the distillery to preserve their freshness and avoid premature oxidation. Bologne employs a low-temperature distillation process using a copper column, a technique that enhances the finesse and elegance of the rum while preserving the terroir’s distinct aromas. This dedication to quality has earned Bologne multiple medals at the Concours Général Agricole in Paris, including gold in 1993 and 1999 and silver in 2000.
