- From Tobalá grown at high elevation (around 5,000 ft), tucked into the countryside surrounding the highly regarded mezcal-producing village of San Baltazar Guelavila, this is a benchmark varietal—recently passed from retiring mezcalero Panfilo to his son Jose Francisco, now the second generation of the Hernandez family to work with La Medida!
