From Ishikawa Prefecture, this sake is crafted with AAA-rated Yamada Nishiki rice from Yokowa, milled to 55%, and medium-hard Hakusan underground well water, with an ABV of 18.5%. Using the traditional Yamahai method, it allows lactic acid to develop naturally while the environment adds its own influence during fermentation. This sake is produced in the Origarami style, where fine rice particles are intentionally left in the liquid, giving it a hazy appearance, a silky texture, and a hint of subtle sweetness.
Complex, dry, and powerful, this dynamic sake stands out for its ability to pair beautifully with a wide variety of foods. It is especially well-suited to spicier dishes, such as those found in Szechuan and Thai cuisine. While meant to be enjoyed within the year for its vibrant character, further aging will soften its citrusy edges and allow it to integrate more smoothly into the creamy base, enhancing its overall balance.
