Casco Viejo Tequila Blanco is a blanco tequila crafted in Arandas, Jalisco, by Gran Dinastía (NOM 1610) under the expertise of Maestra Tequilera Elena Camarena. Notably, it is produced in the first net-zero carbon impact distillery in Mexico, emphasizing sustainable agriculture and water renewal practices. Made from 100% Blue Weber (Agave tequilana) grown on a single estate at an elevation of over 7,000 feet, the process involves cooking the agave in brick ovens, crushing it with a roller mill, and fermenting it in open-air wooden tanks for 80-90 hours. Following fermentation, it undergoes double distillation using traditional copper pot stills and is filtered with paper and charcoal before bottling. With a 40% ABV, it offers a friendly yet expressive profile, balancing floral notes like pink peppercorn and sweet herbs with delicate fruit and citrus zest.
