It’s tempting to think of Shochu– a spirit exploding in popularity particularly amongst the cocktail set– as just a higher proof version of sake. But they are different: sake is brewed (like beer) from rice & shochu is distilled from sweet potatoes or better yet, from barley, like Iichiko, the super-smooth version from Oita Prefecture in Kyushu.
