Rhum J.M, located in Macouba, Martinique, presents an exquisite AOC Martinique Rhum agricole, meticulously crafted with a commitment to quality and authenticity. Distilled from 100% estate-grown sugarcane on a Creole copper column still, the production process starts by carefully crushing sugarcane within one hour of harvest. The freshly extracted juice undergoes open-tank fermentation with French baker’s yeast for 24 hours, resulting in a distinct distillate.
The distillate is then proofed with spring water sourced from Mt. Pelée, and the rhum undergoes a gradual reduction over six months before entering a three-year aging process. Initially aged in re-charred bourbon barrels, it is then transferred to ex-rum barrels with a heavy, alligator char (char #4). The aging imparts a nose characterized by notes of bananas Foster, Golden Delicious apples, and Café Brûlot.
The palate reveals a harmonious blend of clove, white pepper, and lace cookies, leading to a bright finish with hints of fresh banana leaf and lemon oil.
